When I had the surreal experience of visiting with José Andrés at the Think Food Group offices (an amazing space, btw!), he pulled out a very old book and shared with me a couple “catsup” recipes in a (possibly original?) copy of The Virginia Housewife.
Being that both Matt and myself are native Virginians, this made me extra excited. And thanks to a tip from a friend and Garden & Gun magazine, we found that The Virginia Housewife , along with a few other historic culinary texts, are now free in the public domain and available online!
Check out this old mushroom ketchup recipe. There is the proof, in text, that ketchup is not only for tomatoes!
If you feel like being distracted on a Friday afternoon, go ahead and start reading! https://archive.org/details/virginiahousewif00randrich
